Exopolysaccharides (EPS) are exogenous bacterial sugar polymers with many applications in dairy, pharmaceutical and cosmetic industries, using it as thickeners, stabilizers gelling agents. The study aimed to screen for potential exopolysaccharide producers from Lactobacillus spp. isolated locally fermented milk (nono). Twenty-five nono Samples were collected Wambai market, Kano. Lactic acid bacteria de Man Ragosa Sharpe Agar. Isolates identified by API 50 CHL kit web, screened EPS production which the was extracted quantified phenol-sulphuric method. Next, influence of carbon source (Glucose, Sucrose Lactose) concentrations on evaluated some strains. functional groups confirmed FTIR. all Gram positive, catalase oxidase negative, identification yielded; acidophilus 1, Lb. brevis fermentum, paracasei ssp paracasei, 3. Ten isolates yielded range 248.33mg/l - 07.83mg/l. FTIR analysis produced peaks around 3,300–881cm-1. Hence has brought light presence producing LAB nono, could be further exploited harness their potential.
